Cafe Rio Lime Cilantro Rice

Juice and Zest of 1 large or 2 small Limes2 1/4 Cups Chicken Broth
2 TB Chopped Cilantro (I have used dried and it works well, too)
3/4 Tsp. Salt
1/4 Tsp. Cumin
In a skillet, melt butter with rice, add liquid and other ingredients. Bring to a boil, reduce heat, cover and cook for 20 minutes.
